Corn on the Cob

Okay, now you think I have lost my ever loving mind don't you?? I mean how hard is it to boil corn on the cob? Not hard but there is a secret. Want to know what it is? Read the "recipe" and you will have the secret to good corn on the cob, no matter if it is fresh from the plant or a few days old from the store. This is What's Cookin on Beaty's Creek today!

Needed:

10 ears of corn on the cob-cleaned
1 pot of boiling water
1 cup white sugar

When you fill your pot with water add your sugar. Now heat your water to boiling, now add in your corn. I boil mine for 20-30 minutes but that is up to you. You may wonder what sugar does for the corn, well I will tell you. It brings the natural sugar out in the corn. See the sugar goes to starch when corn is picked. It happens pretty fast too. I just always add sugar to my corn water. Once corn has boiled, pour off water and eat with loads of butter, salt, and pepper! Summer is almost here!!

Doritos Casserole

This is the easiest casserole you will ever make. I heard about this a few years ago on Good Morning America, this is a version of Charlie Gibson's Casserole. I changed a few things around to my family's likes and now you have Doritos Casserole. I am serving it tonight with corn on the cob that I froze this past summer. We eat a salad with this casserole too. Just depends on what sounds good that day. So corn on the cob it is.

Needed:
1 large bag of nacho Cheese Doritos
2 cans of your favorite canned chili with beans
1 can medium enchilada gravy
1 16 ounce container of sour cream
1 1/2 pound Colby jack cheese-finely shredded

Crush Doritos in the bag they came in. Much easier if you ask me. Add to crushed Doritos, chili, enchilada gravy and half of your cheese. Pour into a 9x13 pan and spread sour cream over entire casserole evenly and top with remaining cheese. Place in a 350' for 30 minutes or until bubbly and hot.

We really like this. Hope you will give it a try because this is "what's cookin" tonight.

Grilled Corn-on-the-Cob

I love corn and I love it grilled then smothered with mayo, dusted with cayenne pepper and parmesan cheese. Soo good... Anyway, grilling corn is easy and the kids think using the husks as handles is cool. This is What's Cookin this weekend on Beaty's Creek.

Needed:
7 ears of corn-silks removed but husks left
sink full of water
grill

Soak corn in water for 1 hour, this helps steam the corn and keeps husks from burning up. Cook over medium coals for 10-15 minutes. This is so good with anything else grilled.

July 4th Menu

I love the 4th of July!! I don't however like fireworks, Ransome makes up for that. He loves fireworks! We will be cooking out of course, isn't that what everyone does on the 4th??? In our area we are known for being the Huckleberry Capital of the World, and this is the time of year we have our festival. Total small town charm and small town fun! Anyway this is What's Cookin on Beaty's Creek this 4th of July!!
