Gooey Pumpkin Butter Cake



I love being part of the Foodbuzz family! I was picked to receive Duncan Hines coupons last week and I was really happy! I use Duncan Hines products all the time and free coupons are just an added bonus! I really like gooey butter cake so why not add a little pumpkin? Now you have Gooey Pumpkin Butter Cake! This would be a great addition to your Thanksgiving buffet. This is What's Cookin on Beaty's Creek today.



Needed:

1 Duncan Hines yellow cake mix
2 eggs-I use free range
1 stick of butter-melted



Filling:
1 package cream cheese-softened
1 can pumpkin puree
3 eggs
1 t vanilla
1 stick butter-melted
4 cups powder sugar
1 t cinnamon


Preheat oven to 350 degrees F.
Mix cake mix, eggs, and butter very well in your Kitchen Aid Mixer. Smooth the mixture into a lightly greased 9x13 pan.
For the filling in a large bowl, beat the cream cheese and pumpkin until smooth. Now add eggs, vanilla, and butter. Beat together. Next, add in the powder sugar, cinnamon, and mix well. Pour pumpkin mixture over cake batter and bake at 350' for 40 to 50 minutes. Don't over bake, the middle should still be gooey when done. Serve with Cool Whip.

Sweet Potato Cake




Sean's Aunt gave us some sweet potatoes from her garden the other day. I love sweet potatoes baked, mashed or fried. I decided to try out a new recipe and make these babies into a cake. They smelled so good baking that they almost did not make it to the cake. Raine at one time loved sweet potatoes, but now has decided the she doesn't...Good, more for me haha..... The cake on the other hand was a favorite! Make this for Thanksgiving and you are sure to be the most talked about cook, in a good way too. This is What's Cookin on this COLD Fall morning.

Needed:

1 cup butter-room temperature
1/2 cup brown sugar
2 t cinnamon
2 cups sugar
3 eggs
16 ounces sour cream
1 cup mashed cooked sweet potato-2 medium sweet potatoes
1 vanilla bean
3 cups flour
1 t baking powder
1 t salt
1 t nutmeg

Sift your dry ingredients and set them to the side. Now combine the dry and wet ingredients together and blend well. Now pour into a greased bundt cake pan. Bake at 350' for 1 hour and 15 minutes. Keep an eye on it after 1 hour, my oven took the extra 15 but yours may not. Ice when completely cool with the following icing.

Cream Cheese Icing
2 package full fat cream cheese-softened to room temperature
3 cups powdered sugar
2 vanilla beans scraped
3 T milk

Mix cream cheese until smooth. Now add in your vanilla bean scrapings, and powder sugar. Beat until smooth. Now add in milk a T at a time until it is smooth hand easy to pour. Now pour over cooled cake and enjoy with a cup of coffee or a glass of milk!

Sweet Potato Pie


You may think that sweet potato pie tastes just like pumpkin but you are wrong!! Sweet potato pie, if made correctly has a totally different taste than pumpkin. Yes, it is made like a pumpkin pie but the end result is different. This is What's Cookin on Beaty's Creek today.



Needed:




3 Baked sweet potatoes or 3 cans of sweet potatoes drained

3 eggs-I use free range

1 can evaporated milk

1 t salt

1/2 cup white sugar

3/4 cup brown sugar

2 T butter

1 t vanilla




Mash your sweet potatoes with both sugars, salt, and butter. A few lumps are fine. Now add your eggs, vanilla, and evaporated milk. Stir very well. Now pour into a chilled pie crust. Bake at 425' for 20 minutes and them lower oven temperature to 350' and continue to bake for 40 minutes. You want to be able to insert a knife and have it come out clean in the center of pie. 1 hour was fine in my oven. Serve warm with whipped cream!

Pumpkin Cheesecake


I love cheesecake of any sort. The problem with that is I am not close to a Cheesecake Factory or a bakery that makes cheesecake. I had to become my own best friend and make a good cheese cake. This is What's Cookin on Beaty's Creek today.






Needed:


2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons melted margarine or butter
Mix ingredients, and press into a 9-inch springform pan.




Filling:


3 packages cream cheese-softened to room temperature
3/4 cup sugar
1/4 cup packed brown sugar
5 eggs
1/4 cup evaporated milk
1 can pumpkin
1 t cinnamon



Beat cream cheese, sugar, and brown sugar; mix until light and fluffy. Add eggs, one at a time, add remaining ingredients on medium speed, mixing well. Pour batter into prepared crust, bake for 1 hour at 350'.




Topping:


6 teaspoons butter-melted
1/2 cup brown sugar
1 cup chopped pecans




Mix melted butter, brown sugar, and pecans. Sprinkle topping on cheesecake and bake 15 minutes longer. Cool cheesecake and run knife around edge of pan. When cheescake has completely cooled, cover with plastic wrap and refrigerate

Turkey Noodle Soup

Here is an idea for what is left of your turkey. Make soup..... I make mine like I do my chicken noodle soup but use your leftover turkey carcass. I boil the carcass for a couple of hours and then strain all of the bones out. It is really good. This is What's Cookin on Beaty's Creek today.

Pumpkin Chocolate Chip Loaves


I really like to make and eat quick breads. This recipe comes from the cookbook 125 Best Chocolate Chip Recipes. Give this bread a try to tide your crew over until the bird gets done this Thanksgiving. This is What's Cookin on Beaty's Creek today.
Needed:

3 cups all purpose flour
2 t cinnamon
1 1/2 t baking powder
1 1/2 t baking soda
1 t allspice
1 t nutmeg
1/2 t salt
1 cup vegetable oil
3 cups sugar
4 eggs
2 cups canned pumpkin puree
1/4 cup water
1 1/3 cups semi sweet chocolate chips
Sift together dry ingredients, except sugar. In your Kitchen Aid combine oil, sugar, eggs, and pumpkin, stir until well combined. Now add in your dry ingredients a cup at a time. Add in your chips now and stir until just mixed. Pour into well greased loaf pans and bake at 350' for 70 minutes.

Thanksgiving 2009


It is that time of year again and I am so excited. Is there something wrong with me? I love planning our Thanksgiving Dinner Menu! Do you? I think planning ahead really helps me out. I try to make a menu and then write down what I need for each item I am making. I like to make a few different things each year but of course most want the traditional Thanksgiving food. This is what I am planning so far. Stay tuned for changes and updates.
