Wendy's Chili


Sean just loves Wendy's chili. The only problem with this is there are no Wendy's close to Beaty's Creek so I make his Wendy's Chili at home. I have been using this recipe for years, just love Todd Wilbur's copycat recipes. I think they are so close to the original that they can fool anyone. It is cold on Beaty's Creek today but we are in Oklahoma for goodness sakes. If you are not familiar with Oklahoma weather you are missing out. We often say "If you don't like the weather, just wait a little bit."

Needed:
2 pounds ground beef(I use turkey)
1 29-ounce can tomato sauce
1 29 ounce can kidney beans(with liquid)
1 29 ounce can pinto beans(with liquid)
1 cup onions-diced
1/2 cup green chili-diced(I use canned green chili)
1/4 cup celery-diced
3 medium tomatoes-chopped
2 t Cumin
3 T chili powder
1 1/2 t black pepper
2 t salt
2 cups water

Brown meat. Using fork, crumble the cooked meat into pea size pieces. In a large pot, combine the meat plus all of the remaining ingredients, and bring to a simmer over low heat. Cook stirring every 15 minutes, for 2-3 hours

We eat this with shredded cheese and crackers. I love iceberg lettuce wedges as a side too! That's "what's cookin" on Beaty's Creek tonight.

Cowboy Beans


I have made this dish since Sean and I were first married. It is a family pleaser for sure! The weather on Beaty's Creek has been down right COLD! We've had record breaking cold temps of -15 and try 16+ inches of snow in 2 days! The need for hot comfort foods are a must! This recipe is not too sweet but just sweet enough, but you can make it as sweet as you like. This is What's Cookin on Beaty's Creek today.

Needed:

2 cans canned corn
2 cans tomato sauce
6 cups pinto beans-cooked
3 pound ground beef
1 large onion-chopped
1 t cumin
2 t salt
8 T chili powder
1 cup brown sugar

Brown ground beef with onion. When cooked drain any fat and then add in chili powder, cumin, and salt. Stir until combined. Now add in your tomato sauce, beans, corn, and brown sugar. Stir well and let simmer over medium heat for 2 hours. Stir every 30 minutes. Serve with cornbread and shredded cheese.
*I always make Cowboy Beans the day after we have beans for dinner, good way to use up your leftovers.

Super Bowl Cheese Dip

The folks at Foodbuzz were nice enough to send me some Pace Picante Sauce to use for a recipe. The first thing that came to my mind was my cheese dip. I have always used Pace when I have made this dip so this was a no brainer. This dip would be super at your Super Bowl Party this year. I am a Cowboys fan, and it saddens me to think the Cowboys will not be playing in this Super Bowl on their home field. Oh well it just gives me more time to cook for the game. Give this a try and you are sure to make your guests happy! This is What's Cookin on Beaty's Creek today.

Needed:

1 2 lb. box of Velveeta-chopped into inch cubes
1 can golden mushroom soup
1 pound ground beef-browned
1 pound pork sausage-browned
1  medium sized jar Pace Picante Sauce

Place all of the ingredients into a Crock-Pot and heat on low until all has melted and come together. Serve with tortilla chips. This is so good! I like it with fresh veggies too.

Homemade Salami


My mom made this every Fall and I always loved it with a strong mustard and some crackers. This is a lot like summer sausage so if you are a fan of it, you may want to try this. You can make this with venison but I used hamburger this time. This is What's Cookin on Beaty's Creek today.

Needed:

4 pounds hamburger or venison
2 T Garlic Powder
2 T Accent
1 T Onion Salt
1 t Liquid Smoke(NO MORE THAN A TEASPOON!!)
2 T crushed (or whole) Peppercorns

Mix all of the ingredients together very well. Now form into 4 logs and wrap tightly with Saran Wrap and place in the fridge for 24 hours. Bake at 225' for 3 hours. Cool completely before eating or slicing.

Guacamole


Guacamole this time year is a perfect dip, meaning avocados are on sale this time of year and they are good! Did you know more avocados are sold the week prior to Super Bowl than any other time of year? Here is my recipe for guacamole, give it a try!

Needed:
5 avocados-chopped
1/2 small white onion-chopped
1 garlic clove-minced
1 tomato-chopped and seeded
Juice from 1 lime
Salt to taste

I mix all of the ingredients together and then really stir it up. This way you still have chunky guacamole and not mush, don't like to eat green mush. The lime juice will help the avocado from turning but ours never last very long. Munch out with your favorite tortilla chips!

Salsa


Fresh salsa is best when fresh tomatoes are in season but canned work really well in the winter. I will tell you this, "DON'T BUY OFF BRAND TOMATOES"! They are hard and have no taste, buying name brand here is best. We like cilantro in ours, if you don't have a taste for cilantro, leave it out. Make sure you have plenty of tortilla chips to eat this salsa with!

Needed:
4 cans of diced tomatoes or 8 whole garden ripe tomatoes
2-3 jalapenos-diced(I don't seed ours, we like the heat.)
2 garlic cloves-minced
1 bunch of cilantro leaves-chopped
1 small purple onion-diced
Salt to taste
Juice of 1 lime


Mix tomatoes, jalapenos, garlic, cilantro, onion, salt and juice really well. The lime juice keeps the salsa tasting fresh longer, we eat ours so fast it is not needed but I like the taste the lime juice gives. You are ready to serve when finished mixing. This is what I am making today.

El Chico's White Dip


This is my attempt at being a copy cat. I ate the white dip at El Chico's in Muskogee, OK and loved it! I went to an El Chico's in Tulsa and found out you can only get the white dip in Muskogee, bummer. So I knew I had to come up with a copy cat recipe and here it is! Make this for your Super Bowl Party and you will not be disappointed. This is really good with veggies and tortilla chips.

Needed:
8 ounces blue cheese-crumbled
1 cup sour cream
2 cups Kraft mayo
1 cup buttermilk
1 T garlic powder
1 T kosher salt
Tortilla Chips

Mix blue cheese, sour cream, mayo, and butter milk until smooth, now is the time to add the garlic powder and kosher salt. Mix well and place in the fridge for a couple of hours. This makes quite a bit but it will not last if your family and friends are like mine!

Cocktail Meatballs

I bet you have 10 different recipes for meatballs but I bet none of them call for grape jelly. My mom made these for holidays and they are so good. My kiddos love them too. I use ground turkey but you can use beef if you wish. This would be a great snack for your Super Bowl party.

Needed:
2 pounds ground turkey (or ground beef)
1 T garlic powder
1 cup bread crumbs
salt and pepper taste
1 jar grape jelly
1 jar chili sauce(this located next to cocktail sauce in the grocery)
1 egg

Mix turkey, garlic, bread crumbs, salt and pepper and 1 egg. Mix well with hands and form into 2 inch balls. I place mine on parchment paper and bake at 325' until done, usually about 15 minutes. Now place jelly and chili sauce in a crock pot and let melt, now add your meatballs to crock pot. Heat on high until bubbling. These are really good with cheese and crackers.

Doritos Casserole


This is the easiest casserole you will ever make. I heard about this a few years ago on Good Morning America, this is a version of Charlie Gibson's Casserole. I changed a few things around to my family's likes and now you have Doritos Casserole. I am serving it tonight with corn on the cob that I froze this past summer. We eat a salad with this casserole too. Just depends on what sounds good that day. So corn on the cob it is.

Needed:
1 large bag of nacho Cheese Doritos
2 cans of your favorite canned chili with beans
1 can medium enchilada gravy
1 16 ounce container of sour cream
1 1/2 pound Colby jack cheese-finely shredded

Crush Doritos in the bag they came in. Much easier if you ask me. Add to crushed Doritos, chili, enchilada gravy and half of your cheese. Pour into a 9x13 pan and spread sour cream over entire casserole evenly and top with remaining cheese. Place in a 350' for 30 minutes or until bubbly and hot.

We really like this. Hope you will give it a try because this is "what's cookin" tonight.

New Year's Eve 2008

Our New Years Eve is going to be great! Every year we have hors d'oeuvres, punch, and a little Martini & Rossi Asti Spumante for the adults. I really like planning, can you tell???
Here is what we are going to have this year. Some are kid friendly and some are for the adults. I will post recipes tomorrow and pictures as the food is made.

Stuffed Mushrooms

Needed:
2 pounds of button mushrooms with stems removed and chopped
1 cup of plain bread crumbs
2 eggs-beaten
1 stick of butter melted
1 pound of a really strong cheese (blue cheese will do but the stinkier the better)

In a large bowl combine chopped mushroom stems, bread crumbs, butter, cheese, eggs, and garlic. Once mixed well add to mushroom caps. Bake in a 425' oven for 15 minutes. Filling will be bubbling when you take them out. Serve immediately. They are so good! I like them cold too.

Stacey's Meatballs

Needed:
2 pounds ground turkey
1 cup plain bread crumbs-soaked with 1/2 cup milk that follows
1/2 cup whole milk- to soak bread crumbs in
2 t garlic powder
2 eggs-beaten
salt and pepper to taste
Spaghetti sauce for dipping

Mix turkey, soaked bread crumbs, eggs, garlic, salt, and pepper very well. Form into 1 inch balls and bake at 325' for 20 minutes. Put a toothpick in each ball and serve with warm spaghetti sauce.

Something with shrimp??

Brown Sugar Coated Bacon Wrapped Sausages (YUMMY)

Needed:
Cocktail polish sausage
1 pound bacon cut in 1/2 twice
1 pound brown sugar
Wooden toothpicks

Place bacon piece around cocktail sausage and toothpick it together. Place sausages on a PARCHMENT LINED 1 INCH SIDED COOKIE SHEET. You will be glad you listened when clean up time comes. Now spread brown sugar over sausages. Make sure you spread it evenly. Bake at 425' for 15-20 minutes. The bacon will be crisp when they are done. Remove from tray and serve hot. Very good!!!

Little Pigs in a Blanket

Needed:
Small hotdogs
Canned crescent rolls

Wrap pieces of crescent dough around hotdogs. Bake 350' for 15 minutes. Serve with mustard. Wasn't that a easy recipe???

Cheese Dip

Needed:
1 box of Velveeta-chopped into inch cubes

Cheese Balls

This recipe comes from Trisha Yearwood's cookbook. It is so good that you have to try it!

Needed:
1 14 ounce package Hidden Valley Ranch dressing mix
1/2 cup mayo
1/2 cup buttermilk, well shaken
16 ounces cheddar cheese-grated at room temperature
1 cup pecans-finely chopped

In a bowl, combine all ingredients but the pecans. Mix well. Divide mixture into equal parts and place covered in freezer for 30 minutes. When each ball is firm roll in pecans and serve with crackers. This is really a good cheese ball.
Veggie Tray with dip

Fruit Tray with dip

Needed:
Fresh fruit of your choice( I like different apples, bananas, strawberries, and grapes
16 ounces of cream cheese-at room temperature
1 large jar of marshmallow whip
2 t vanilla

Blend cream cheese, marshmallow whip and vanilla together until very creamy and smooth. Hint, make sure your cream cheese is at room temperature. If not your dip will be lumpy. Chill for at least 1 hour and serve with fresh fruit. Everyone likes this one!



Artichoke Dip with toasted pita crisps

This also comes from Trisha Yearwood's cookbook. You have to try this. Ransome really likes this one.

Needed:
1-14 ounces can artichoke hearts-drained and finely chopped
8 ounces feta cheese-crumbled
1cup grated Parmesan cheese
1 cup mayo
1-2 ounce jar pimentos-drained and chopped
1 t garlic-minced

Mix all the ingredients together and place into a small casserole dish. Bake uncovered at 350' for 25 minutes or until lightly brown. I serve this with pita crisps. Can't wait to set this one!!!

Chili


Tonight is another Ransome Picks night. It is really cold on Beaty's Creek today and snow is in the forecast!! We love snow here!! It is probably because we never get very much. Ransome wants chili dogs tonight and as all of you know, what Ransome wants is what Ransome gets. Ransome will be roasting our hotdogs over the fireplace. It will be the first time Raine has seen the fireplace with a fire in it. We will see how that goes..... This chili will warm you up so give it a try.

Needed:
2 pounds ground chuck
1 onion-chopped
1 large can tomato sauce
4 cups of pinto beans (I use leftover pintos or you can use Mexican style canned beans)
4 T chili powder
1 t cumin

Brown the ground beef with onion. When beef is done and onions are soft add the following, tomato sauce, pintos, chili powder and cumin. I add water because we like our chili soupy. I cook ours all day long on a low heat. I like it better when it has cooked a while. We like it with crackers, lettuce wedges, carrot sticks and shredded cheese. Tonight it is with hotdogs.
