Carrot Spoon Bread


You know I really love Everyday Food Magazine. There are so many good recipes in the magazine each month and I have never made anything from it that failed. I decided to make this one for Thanksgiving this year but wanted a test run a few weeks before and it passed!!!! We had it with Hormel Pork Tenderloins and it was a great side. Give this one a try with your Thanksgiving Meal. It will travel great too, another bonus. This is What's Cookin on this cool Fall morning on Beaty's Creek.


Needed:

3 cups peeled and finely grated carrots
3 T water
1 1/2 cups all purpose flour
2 t baking powder
1/4 t baking soda
3/4 t salt
4 eggs
1 cup packed brown sugar
1 stick butter-melted

Place shredded carrots in a microwave safe bowl with water. Cover and microwave for 4 minutes. Cool. Now beat eggs, sugar , and butter together. Sift flour, baking powder, baking soda, and salt and then add to egg mixture. Place in a well buttered 2 quart baking dish and bake at 350' for 55-60 minutes. Serve warm but it is really good cold too.

Turkey Noodle Soup

Here is an idea for what is left of your turkey. Make soup..... I make mine like I do my chicken noodle soup but use your leftover turkey carcass. I boil the carcass for a couple of hours and then strain all of the bones out. It is really good. This is What's Cookin on Beaty's Creek today.

Turkey Burger


I was never a fan of turkey burgers. I always thought they were dry and did not have much flavor. When I heard Oprah Winfrey talk about the turkey burger she had eaten at Donald Trump's Mar-a-lago Resort, I was intrigued by the ingredients. I made my own version of this recipe, hope you like it.

Needed:
3 pounds ground turkey or chicken
2 golden delicious apples-chopped very small
1 yellow onion-chopped into tiny pieces(I do this so Raven does not see the onion.)
2 cloves of garlic-minced
1 pound of sharp cheddar cheese-shredded
1 t cayenne pepper(use less if you don't want too much spice)
salt and pepper to taste
Oil

Heat enough oil to coat your skillet. Once heated add apples, onion and garlic. Saute until very tender, almost mushy in fact and let cool. Now mix all of the ingredients together. Mix ever so gently with your hands. Over mixing will cause tough burgers. Form into patties and cook in a oil covered skillet. I cook the heck out of mine but I want my turkey done. Check with a meat thermometer, temp should be 160'. Make sure you only turn your burgers once, I cook ours about 7-8 minutes per side. I think these are the juiciest turkey burgers I have ever eaten!
