Yummy Corn Flake Bars

I decided to make this bar the other day and the kiddos enjoyed them.  They are super easy and at least kinda healthy  heehee, cereal is good for you right???  Make these for an after school snack or send them to your college kiddo.  This is What's Cookin on this 100' day in September.

Needed:

6 cups corn flakes-crushed
1/2 cup butter-melted
4 T sugar
1 bag milk chocolate chips
2 cups sweetened, shredded coconut
1 cup peanuts-chopped
1 can sweetened condensed milk

Mix corn flakes, sugar, sugar, and butter together.  Press into a 9x13 pan. Pour coconut, peanuts, and then chocolate chips on top.  Now pour on the sweetened condensed milk and bake a t 350' for 15-20 minutes.  Cool completely and cut up as you would brownies.

Easy Snack Bars


This is a quick and easy sweet treat. I used semi-sweet chocolate chips because that's what was in the pantry but Ransome said he wants white chips next time. Peanut butter chips might be equally tasty also. These are a great after swimming snack. The kiddos have been swimming like little fish in Beaty's Creek this week and will come home absolutely famished. Do you remember that? Swimming all day and coming home so hungry even an apple looked good. Try this recipe and you are sure to win points with your kiddos! This is What's Cookin on Beaty's Creek today.

Needed:

2 cups graham cracker crumbs
2 cups flaked coconut
1/4 cup margarine, melted
1 can sweetened condensed milk
3 cups chocolate chips



In a medium bowl, mix graham cracker crumbs, coconut, sweetened condensed milk, and butter. Mix until smooth. Press into a greased 8x8 pan.
Bake for 10 minutes in a 325' oven. As soon as you take it out of the oven add your chocolate chips. When they melt swirl them around. Cool, if you can let them and enjoy!

Blueberry Bars


Well it is blueberry picking time on Beaty's Creek again and I am more than willing to pick a few gallons. What is better in a smoothie than frozen blueberries?? This recipe is one of our favorites and I am sure you will like it too. I have been using the I Can't Believe It's Not Butter brand of butter and I am surprised it isn't! It tastes good and it is great to bake with also. This is What's Cookin on Beaty's Creek today!

Needed:

1 cup sugar
1 t baking powder
2 1/2 cups all purpose flour
1 cup butter or I Can't Believe It's Not Butter
1 egg
1 t salt
1 t vanilla

4 1/2 cups blueberries
1 cup sugar
2 t cornstarch

Mix flour, 1 cup sugar, salt, and baking powder together. Now cut in the butter until crumbly looking. Add in the egg and mix well. Press 3/4 of the crust into the bottom of a 9x13 pan. Now mix blueberries, sugar, and cornstarch together then pour over the bottom crust. Sprinkle the remaining crust on top of blueberries and bake at 350' fro 45 minutes.

English Toffee Bars


When I saw this recipe I thought I hit the mother load. It comes from 1001 and Cookie Recipes, a gift from my husband when we were first married. I am a toffee lover and these bars are so good you will be making them all the time, at least I am. I think they would be the best ice cream sandwich cookie but have not ventured that far with them yet. This is What’s Cookin on Beaty’s Creek today.

Needed:

2 cups all purpose flour
1 t cinnamon
1 cup Crisco
2 cups packed brown sugar
1 large egg yolk
1 cup chopped walnuts

Cream Crisco and brown sugar, now add egg yolk mix until creamy. Now add flour, cinnamon, and nuts, mix well. Pour into a 9 inch square pan, dough will be thick. I flattened mine in the pan with parchment paper.. Bake at 275’ for 1 hour.

Whole Wheat Date Bars


When I read this recipe in Martha Stewart's Cookie cookbook, I thought it would make a good breakfast bar for Raven and it did. I love dates and eat them by the handful but was not sure if Raven would like them. She said they were great but Ransome did not care for them, he is not into "health food." Needed:
for the filling:
2 1/4 cups dates
1/4 apple cider

for the dough:
1 1/4 cups whole wheat flour
1 cup all purpose flour
1/4 cup wheat bran
1/4 t course salt
1/4 t baking soda
2/3 cup packed brown sugar
1 t finely grated lemon zest
10 T room temperature butter
1 egg
1/4 applesauce

1. Make filling: Bring dates and cider to a boil in a saucepan over medium heat. Reduce heat to medium and simmer until dates are soft and almost all of the liquid has reduced, about 10 minutes. Let cool completely and then transfer to a food processor. Puree date mixture until smooth.

2. Make dough: Whisk together both flours, bran, salt, and baking soda in a bowl. Put brown sugar and zest in a bowl of your Kitchen Aid mixer fitted with the paddle attachment. Mix on medium speed for 30 seconds. Add butter; mix until combined, about 1 minute. Add egg and mix until fluffy. Add flour mixture in three batches, alternating with 2 batches of applesauce. Now divide dough in half and wrap each half in plastic; shape into a rectangle. Refrigerate until firm, about two hours.

3. Preheat oven to 375'. Roll out one piece of dough between two pieces of floured parchment paper and place into a 9x13 pan. This is what I did because it was much easier. Now place date mixture on top of dough and place in the fridge until very firm. Now roll out the rest of the dough and place on top of date layer. I had to use flour dusted on parchment when I rolled the dough out. Bake for 20-30 minutes. Cut into bars and enjoy!

Side note... Martha says the dough is a sticky one and this is true. She also says to fold the dough over on itself with the filling inside but I thought this was just too hard for me. This why I say a layer of dough, then dates, then dough in a 9x13 pan. To me, this method just worked better.
