Tulsa School Day Cinnamon Rolls


I am crazy library book searcher. Is that a name???? I just love to look online at books and then check them out. Well the other day I came across a cookbook that sounded so good that I could not wait to get it. It finally came in and I was surprised when I opened the book to find it was signed by the author and the she was from Tulsa, OK. The book is America's Bread Book and the author is Mary Guber. I did some research and found out that she passed away just this year I was so sad that I never got the chance to meet her. Her life was one that sounds like one I would have loved to live. Please, if you can buy this book or if you are lucky like me and have it in your library system, check it out! This recipe is one of many that I have tried out of this book but I have loved them all.



Needed:

4 packages yeast
2 cups warm water
1/2 cup sugar
3/4 cup butter-melted
1/2 cup instant dry milk
2 t salt
3 eggs-beaten
9 cups flour-maybe a little more or maybe a little less due to humidity
Melted Butter
Cinnamon Sugar

Frosting:

2 cups powdered sugar
1 t vanilla
Warm Coffee

In a large mixing bowl combine the yeast and water, stirring until dissolved. Add the sugar, butter, milk, salt, and eggs, blending thoroughly. Beat in 3 cups of flour to make a smooth batter. Gradually add sufficient flour to form a soft, workable dough. Turn out onto a floured surface and knead until smooth and elastic, about 8 minutes. Round into ball and place in a warm buttered bowl, turning to coat the top. Cove loosely with plastic wrap and a towel and let rise until doubled, about 1 hour.

Large Rolls
Butter 6 muffin tins (twelve 2 inch muffins per tin) or 6 9-inch cake tins. Divide the dough into 4 equal portions. Roll each piece into an 18x10 inch rectangle. Brush with melted butter amd sprinkle heavily with Cinnamon Sugar. Roll up from the long side (the tighter you make the roll, the more swirls you will get), jelly-roll style and seal the seam. Cut into 1 inch slices and place in prepared tins. Cover and let rise until light, about 30 minutes. Bake in a preheated 350' oven for 25 minutes.

To frost, combine the powdered sugar, and vanilla. Whisk on a sufficient warm coffee to make a thin icing. When the rolls have baked, turn them out on a serving tray and cover with warm icing.

Raine's Dinner



Raine told me the other night that she wanted wild onions for dinner.  I was busy making pasta and told her we would have them for lunch the next day.  The next thing I knew she handed me a bunch of wild onions.  She is so funny.  Had to take a picture and share.  That's What's Cookin on Beaty's Creek.

Broccoli Chicken Casserole


The first time I had this casserole was at one of my husband's family dinners before we were married. His mother would occasionally make it and I was lucky to be there when she did! It is as good cold as it is hot in my opinion. I know many people do not like casseroles but they are a great meal for the family. This is "What's Cookin" on Beaty's Creek tonight.

Needed:
1 whole chicken
4 bunches of fresh broccoli
5 lbs. of potatoes-peeled and quartered
1 large can cream of mushroom soup
1 large can cream of chicken
1 small can cream of celery
1 small can cream of broccoli
2 pounds of cheese-shredded
salt and pepper to taste

Boil chicken covered with water until done. I salt and pepper my water to taste, I think the chicken tastes better. Remove chicken and let cool. Once the chicken is cool, remove all of the meat and layer in a casserole pan. Now place your potatoes in chicken water and boil until done, this usually takes 20 minutes. Remove potatoes from water and place them on top of the chicken. I salt and pepper the potatoes now. Now is the time to cook your broccoli, place the broccoli in the same water and cook until done but still bright green, usually 15-20 minutes.. Remove from pot and cut up broccoli, then place on top of potatoes. Mix all of your soups together and pour over casserole and place shredded cheese on top. Bake covered for 30 minutes at 425'

Homemade Hot Cocoa


Hot Cocoa is a big thing for us. We always take a big thermos with us when we go to look at Christmas lights each year. This year we will be taking a helicopter tour of Christmas lights, should be exciting. Ransome is really looking forward to it. In case you would like to take a helicopter tour- http://www.xmasflights.biz/ -that is if you are in the Tulsa area. Check in your area, there maybe helicopter tours there also. Back to the hot cocoa, we drink lots of it around here. Every morning there is hot tea and cocoa going in our kitchen. In the evenings we light a fire in the fireplace and drink cocoa too. I think this recipe is the best! I have read others but this one beats all the rest! Give it a try!


Needed;

1- 20 ounce container of powder milk(any brand is fine)
1- large container of Coffee Creamer, not sure of size but it the large container in my grocery store, not Sam's large size( I use Coffee Mate here, I think it tastes better.)
2 pounds powdered sugar
2-8 ounce containers of Cocoa, not sweetened(I use Hershey, easy to find and tastes good too)
1 bag of chocolate chips( I use Toll House semi-sweet but it is up to you.)
1 bag of white chocolate chips

Dump all ingredients in a large sealed container(Tupperware). Shake very well. Make sure the chips are mixed all through your mix, not just on the bottom.



Measure 1/2 cup, ( I leave a 1/2 cup measuring cup in the Tupperware) place into a 12 ounce mug. Microwave milk on high (we use whole milk) until desired hotness is reached, then stir in mix. I know this has powder milk already but your kiddos will get a double dose of calcium this way! We add marshmallows and whipped cream to the top.

43 Things You Probably Don't Know About Me

Next month I will be turning 43 years old.  I thought I would share a little about me.  Sit back and laugh or cry or be bored.....This is What's Cookin in my head on Beaty's Creek today.

2.  I was born Oct. 18, 1970.
3.  I love to do laundry.
4.  I hate to dust....
5.  I love family get togethers.
6.  I wanted to have at least 6 kiddos.
7.  I have 3 kiddos.
8.  Our kiddos are 19, 12, and 6 years old.
9.  I have been married to the same man for 21 years.
10.  I am a liberal Conservative. Oxymoron???
11.  I love to garden things you can eat.
12.  I love Diet Dr. Pepper.
13.  I drink 2 cups of very strong coffee each morning.
14. My favorite hot tea is Earl Grey.
15.  I love any food that will turn my tongue Smurf blue. Ocean Water from Sonic and blue cotton candy being two of many.
16.  Red raspberries are my favorite fruit.
17.  I really hate meat.
18.  I hate water to drink.
19.  I have had type 1 diabetes for 38 years.
20.  I have no complications from said disease!!
21.  My first car was a 1986 Mustang Convertible.

Chocolate Zucchini Cake


My garden is putting out quite a few zucchini squash right now and I am so glad. See, I am not a person who raises a million squash and then tries to find a home for all of it. I raise a good share but not like people you hear about who raise truckloads. I freeze a good portion of mine but we also like to enjoy them while they are fresh. This cake is so moist and chocolaty that your kiddos will never know that there is anything "good" for them in it. You can ice the cake to make it even better but we like ours without icing. This is the only time I will ever type that, we like our icing around here... This is What's Cookin on Beaty's Creek today.

Needed:

4 eggs-I use free range
1 ½ cups oil
2 cups sugar
3 cups finely grated zucchini
3 cups flour
1 ½ t baking powder
1 t baking soda
1 t cinnamon
1 t salt
1 bag of milk chocolate chips-melted



In a bowl of mixer, beat eggs until creamy and light yellow on medium-high speed. Add oil and sugar and beat another minute. Add the zucchini, flour, baking powder, baking soda, cinnamon, nuts and melted chocolate. Beat on low speed for 1 minute or until combined. Bake in a 9x13 greased and floured pan for 1 hour at 350'.

Tabouleh




My love of tabbouleh started in the 80's.  My mother would make it occasionally and I just loved it.  Through the years I have changed my recipe to go along with my likes of the time.  One thing is for sure, ALWAYS use fresh lemon juice.  Please don't use the bottled stuff for this recipe.  I eat this with homemade pita bread and a little feta cheese.  Yummy!

Needed:
3 cups prepared Bulgar wheat
2 tomatoes-chopped
2 bunches green onions-sliced
1 English cuke-chopped
2 bunches-parsley-chopped
2 cups fresh lemon juice
1 cup olive oil
2 T fresh ground pepper
1 T sea salt

Pour 7 cups of boiling water over Bulgar and let set until it cools.  Pour off extra water. Now add in tomatoes, green onions, cuke, and parsley.  Stir well.  Sale and pepper to taste now.  Mix in another bowl lemon juice, and olive oil.  Pour over mixture and stir, stir, and then stir some more.  Let tabbouleh sit overnight, if you can wait that long, and serve with pita and feta. So good!
